  • 2 eggs
  • 2-1/2 C grated zucchini
  • 1 C oil
  • 1-1/2 C flour (all-purpose)
  • 1 tsp baking soda
  • 1-1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 3/4 C brown sugar
  • 3/4 C white granulated sugar
  • 1 tsp vanilla
  • 1/2 C chopped nuts
  • 1/2 C oat bran


  1. Preheat oven to 350*F
  2. Mix flour, baking soda, baking powder, salt, cinnamon, nutmeg, nuts and oat bran in large bowl and set aside
  3. In another bowl, beat eggs well. Then add oil, both sugars and grated zucchini. Beat till smooth
  4. Add dry ingredient mixture gradually and continue beating till smooth
  5. Bake in 2 lightly greased loaf pans for 45-60 minutes
