Delicious hot out of oven with morning coffee. Awesome at dinner with ice cream on top.
Banana Nut Loaf
Ingredients
- 2/3 C sugar
- 1/3 C soft shortening
- 2 eggs
- 3 TBSP buttermilk
- 1 C mashed ripe bananas (2-3)
- 2 C sifted self-rising flour
- 1 tsp soda (If using all-purpose flour, use 1/2 tsp soda and 1/2 tsp salt)
- 1/2 C chopped nuts
Instructions
- Heat oven to 350* F
- Mix together thoroughly the sugar, shortening, and eggs
- Stir in buttermilk and mashed banana
- Mix soda into flour and gradually add flour/soda to the wet mix
- Fold in chopped nuts
- Bake in bread loaf pans for 50-60 minutes
