  • 1 egg
  • 1/2 C milk
  • 1 C applesauce
  • 3 TBSP soft shortening
  • 2 C sifted self-rising flour (When using plain flour, add 2-1/2 tsp baking powder and 3/4 tsp salt)
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/3 C sugar


  1. Grease bottom of muffin pan or insert paper liners
  2. Break egg into bowl and beat with fork
  3. Add milk and shortening and mix
  4. Add applesauce to mixture and stir
  5. Mix sugar and spices into the flour
  6. Stir in flour, spices and sugar, mixing enough to blend
  7. Add berries or nuts, if desired
  8. Fill muffin cups 2/3 full
  9. Bake at 350* for 20 minutes
