Lemon Dijon Chicken over Pasta
I usually use rotisserie chicken at the grocery store, but you could use leftover cooked chicken if you had that on hand too.

This recipe is measured for two servings. Adjust to fit your needs. I make this recipe a lot because it is quick and easy to make. I can usually have this meal on the table in about fifteen minutes. It is a great recipe to use when you have company coming over. The lemon flavor will add to the taste of this dish.

Ingredients

  • 3 Tbsp fresh lemon juice
  • 1 Tbsp dijon mustard
  • 1 Tbsp parsley
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp black pepper
  • 2 cloves garlic
  • 4 oz cooked chicken breast, chopped (or more if you desire)
  • cooked whole-wheat spaghetti or preferred noodles

Instructions

  1. Whisk together lemon juice, mustard and parsley
  2. Add salt and pepper to taste
  3. Heat oil in a nonstick skillet over medium-high heat
  4. Add garlic and cook until fragrant
  5. Add remaining ingredients
  6. Toss to coat thoroughly with lemon sauce and heat through
  7. Mix into noodles
  8. Serve with a voracious appetite and great garlic bread
