Nothing gives you more pleasure than sinking your teeth into a warm coffee cake that brings back memories of the Grannie who made it with so much love.
Coffee Cake
Ingredients
- 1/2 C shortening
- 1 C sugar
- 2 eggs
- 1 C milk
- 2-1/4 C sifted self-rising flour (If using all-purpose flour, add 3 tsp baking powder and 1/2 tsp salt)
- 1/2 C chopped nuts of your choice
- Crumble Topping
- 1/2 C brown sugar
- 1 tsp cinnamon
- 2 TBSP butter
- 2 TBSP flour
Instructions
- Heat oven to 375* F
- Grease and lightly flour a baking pan
- Cream shortening
- Add sugar and continue creaming until fluffy
- Add eggs and blend into creamed mixture
- Gradually add flour to creamed mixture, alternating with milk (dividing into 3 additions of each)
- Fold in nuts
- Turn into pan
- Combine all ingredients for Crumble Topping. Mix with fork or pastry blender
- top cake mixture with Crumble Topping and bake 35 minutes
